One in a Melon

So.. it has been a while since I have had a chance to blog, but I promise I will start getting back on a regular schedule!

I had the opportunity to work at the Farmers’ Market again this summer and have had the pleasure of working with our AARP Fresh Savings program. I’ve enjoyed every minute of it and every person I have met.

Version 3

Working at the market means buying way too much produce every week- especially watermelon.

I purchased a very large watermelon the other day and had no idea what to do with it all… We froze some, grilled some with feta, balsamic vinegar and basil, created sangria, and made a salsa.

This salsa is too good not to share for the last few weeks of summer time sweetness.

Watermelon Salsa

1/4 of a large watermelon

1 jalapeño

1/2  red onion

a handful of cilantro

1 lime worth of juice

A pinch of coarse grain sea salt (or table salt)

*Hot sauce if you like it spicy!

Seed the jalapeño- set aside and add later if you want the extra heat the seeds provide. Dice each ingredient and mix together! Add the lime juice and salt at the end. Let sit for a few hours and enjoy it with your favorite tortilla chips!

And the wild child of the Godfrey clan couldn’t help but lick up some juice!

“When one has tasted watermelon, he knows what the angels eat.”

On Repeat…

I decided I wanted to do a music post today. Spring time just puts me in the mood to roll down the windows and turn the music up. Here are my top 5 songs this week:

  1. As a long time lover of Ray LaMontagne, his newest album didn’t disappoint. “Hey- No Pressure” is an instant classic in my book and a staple on any spring playlist.

“Anything you want your life to mean it can mean.”

2. Found on a random suggested Spotify playlist, “Spirits” will be playing through my speakers well into summer.

“I’ll be a dreamer ’til the day I die
But they say oh, how the good die young”

3. My boy Anderson East always gives me groovy music and “Devil In Me” is no exception. Obsession might be a strong word, but it accurately describes how I feel about this song.

“And she could be an angel, Lord, cause she’s bringing out the devil in me”

4. This song goes out to everyone college senior or super senior I know. Really “2AM” works for anyone who knows “nothing good happens past 2 AM.”

“Yeah we’re getting older
Staying in at home
It’s good enough for both us”

5. Last but not least, a local Nashville band for listening pleasure, Safe in Blue. “Song I Believe In” is the perfect song to go on a long spring drive with no particular destination in mind.

“Oh there’s a fight I can’t stop, Between myself and the clock

Honorable Mention goes to: You Are My Sunshine and Mess Around

I hope you enjoy all these songs, I sure am. They can all be found on Spotify. Let me know any of your song suggestions! I love finding new music and hopefully you just found some new tunes too!

Après-ski!

One of the joys of living in Boone, North Carolina is the opportunity to go skiing (almost) all winter long! Beech, Sugar, and App Ski Mountain are all within a quick drive, and even give students killer deals so we can take advantage of being so close.

While I love to ski, I do not go near enough! But you will never find me far from the après-ski activities.

kate_davis_godfrey_blog_12_20_15_0111

When I stumbled upon this sweater waiting to check-out at J. Crew, I knew it was perfect for the winter season. Especially in Boone when it can be mid 50s one day and snow the next… You never really know when winter will end.

kate_davis_godfrey_blog_12_20_15_0115

(That’s an exact representation of what I look like while skiing.)

kate_davis_godfrey_blog_12_20_15_0100

Ever since I started wearing uniforms in 3rd grade, I have loved plaid skirts. This one included. I got it from J. Crew a few years ago and consider it a winter staple.

kate_davis_godfrey_blog_12_20_15_0116

These green suede boots are everything to me. I found them in the sale section for $15!! I justified it because even if I wear them once (I’ve worn them more than that..) it would be worth it. I’m so glad I have them in my boot collection. They add the perfect amount of sass to any outfit.

On the coldest days in Boone, we typically still have class… Not fair, I know. While at home over Christmas, I went to paint pottery and made my own coffee cup. I figured it was a subtle way to express my attitude towards being at school with snow on the ground.

kate_davis_godfrey_blog_12_20_15_0104

I love homemade things because the imperfections make it perfect, and I get to tell people that I made it myself! Feel free to make one of your own. It usually adds a smile to someone’s face in class.

kate_davis_godfrey_blog_12_20_15_0112

And for a coffee lover like me, I don’t ever give a sip.

Happy Mardi Gras!

Happy Fat Tuesday!

I hope you are indulging in everything bad for you today! I know I sure have been…

This year, a group of friends and I decided that we should make the journey down to the “Holy City” (New Orleans) as Mackenzie liked to call it… I could not be happier that we did. It was one of the most fun weekends I have ever had. A break from the snow was pretty fantastic as well.

The biggest thanks go to Megan for letting us crash her home for the weekend.

If you ever get the chance, go! You will come back stuffed with good food, more beads than you know what to do with, and memories that will last a life time.

As we pulled into the city, we knew that we had to get drive-thru daiquiris, and they were awesome. I highly suggest that they should be the first thing you get as soon as you are in the NOLA area.

IMG_0926.jpg

My favorite part is you can literally wear anything you want.

Perfect (& only) time for a green sparkly crop top!

I don’t think I can begin to describe how much fun the parades were on Saturday!

We started off at this amazing brunch place (with bottomless mimosas)!

IMG_0936.JPG

I got the fennel and spinach frittata with a large side of bacon.

Everyone’s food looked amazing, so if you are ever in the area check out Salu!

IMG_0949.jpgIMG_0950  After brunchin’, our day could officially begin.

We went to a couple different parades, and they were all amazing.

There was no telling how many beads we had between the five of us…

IMG_1036.JPG

Did you know that it is illegal to not wear masks on floats in parades in NOLA!?

IMG_0978.jpg

Even the houses celebrate!

IMG_0956.jpg

A thing I noticed and fell in love with in New Orleans was all the murals. I think if there is an empty wall, why not fill it with art!

*This was a very large alligator, but cropping out the finger made it hard to show the whole thing…

IMG_0989

The only rule is there are no rules.

IMG_1032.JPG

Sunday was a day full of struggle and the best cheese fries I have ever had.

The only regret I have was wearing my white Converses (and not being there right now).

IMG_1033

To make myself feel better about missing the festivities this weekend…

I made a KING CAKE today!

IMG_1138.JPG

It was as good as it looks 😉

May your mimosas stay bottomless and lent be successful.

Tah Tah Makeup, you bet!

I have been lucky with starting this blog to have friends that have connections to amazing companies or own their own companies (Looking at you, Jordan Dollard!).  I have been even more lucky that they want me to be a part of what they are doing and creating.

My dear friend Heather works for Tah Tah Makeup based out of Charlotte, NC and sent me some products to try out! I have a tendency to be very picky with what make up I wear, so I was curious about this new, all natural, and local makeup company.

I was and still am beyond impressed! Heather sent me 4 different products and all of them are amazing.

The first product is a liquid blush. I have never been a makeup girl, but I use this almost every day. It is so easy and looks natural. It adds the perfect amount of color. I got Wonder, and it is ideal for picture-perfect, rosey cheeks!

Find your new favorite blush here!

Next in the line up is this fab little lipstick crayon. I wore this all New Years and it was just what I needed for the night. If you want lip color but not lipstick, this light piece of magic is for you.

Screen Shot 2016-01-25 at 11.36.22 AMCheck out all the yummy colors here!

I will say that I have an obsession with eye shadow; always have, always will. Heather chose this purple collection for me, and I like it even more than my Naked pallets (if you know me, you know that’s saying something). The purple tones make my green eyes seem extra green and dreamy. While they don’t have this exact set on the website, check out the others because they are flawless.

IMG_0879

Find your perfect combination here!

Last but not least is the tinted moisturizer. I love this because I do not wear face make up, but this keeps my skin from feeling dry and has SPF in it! I put it on every morning and it takes about 30 seconds. For all you that don’t like to put on foundation and powder and everything else, this is for you. You won’t regret having it on hand.

 Fall in love here!

A huge shout out to Heather for letting me try and fall in love with her products! Do yourself a huge favor and check them out! Shopping local doesn’t have to be limited to just food and boutiques, you can even do it with your makeup!

New Year… New Outfit (Thx weather)

New Years Eve is tomorrow night. It happens to be my least favorite, favorite holiday. I have a love for NYE, but it is that love that makes me hate it. It never happens to be as great as it is in your head.

My favorite part though? The clothing!

It’s an excuse to where something a little scandalous and sexy!

The weather this winter has been crazy. I had every intention of wearing the best Topshop two piece, but it’s going to be way too cold. I hope this provides some inspiration for your outfit choice tomorrow.

kate_davis_godfrey_blog_12_20_15_0149

All lace everything.

kate_davis_godfrey_blog_12_20_15_0145

Booties are a solid choice for a night like tomorrow. They are sassy but tolerable to walk in/stand in line at the bar in all night! These were a steal at DSW!

Bye Felicia , 2015

This year has been a great one from starting the blog, to the Farmers’ Market, to realizing who I am and what & who I love. A new year is always exciting, but I’m beyond thankful for everything I learned in 2015. 2016, you have a lot to live up to!

Silk & Denim

Good afternoon friends! It has been a busy couple weeks with tests and term papers, but I finally got some time to blog!

*Sorry about the photo sizing.. I don’t know what is happening!

This is one of my outfits I keep ready to wear or pack for a trip home! I have a serious obsession with the silk patterned top paired with a pair of ripped jeans.

Keep your winter wardrobe fun with pattern! It is easy to sink into the same routine of sweaters or solids in the colder months, but don’t fall into the trap! It’s easy to stay fresh and vibrant with a splash of color, especially when the skies are gray and foggy.

I cannot live without my black jeans. They are perfect of any occasion, look great with my green suede boots (coming soon)! As odd as it may seem, I have fallen back in love with Abercrombie and Fitch jeans; they just fit so well (and tend to be 50% off most the time).

Black Friday- I’m coming for ya!

Showers Bring Flowers

Showers bring flowers they say, but it’s not the case when winter decides to show up. I guess I will have to settle for floral prints.

kate_davis_godfrey_9_5_15_0054I seriously love dresses, mainly because they are so easy. Two choices are all that is required while getting ready. Fall and winter makes wearing dresses easier said than done. This dress is a staple for the cooler months. It has sleeves, goes with almost any pair of boots, and doesn’t look odd with leggings on under it. The color is nice too because adding a little pink is never a bad idea (especially on nasty, rainy days). This dress is Show Me Your MuMu. They are one of my favorite brands. Their clothes make me feel a little 70s (the best part!). The dresses have a tendency to run on the shorter side, so keep that in mind when picking out your new go-to. Mix up your fall and winter wardrobe with a little color and a little groove.

Wouldn’t you love it if your favorite pair of boots could talk? I’m very interested in what these trusty Frye’s would have to say… I have had them since freshman year of college and wore them so much that they had to be resoled within 6 months. Work hard, play a little harder.

Times are a Changin’

It has been the thick of the semester with midterms, papers, and working on a Teach For America application. The blog has taken a back seat, because school happens to fall higher on the list of important things to do… for logical reasons.

I say this to let my readers know that I am going to be changing the format of the blog. While I still love good drinks, great music, and clothing, I am going to be cutting down to one per post! That way it doesn’t take y’all too long to read it and not as long to write for me.

So let’s see how it goes! kate_davis_godfrey_9_5_15_0007

Lovin’ what you see? Jeans//Top (Good Alternative)//Shoes// Updated Bag//Watch

Boyfriend pants are one of the best things to happen. I seriously love these. When wearing boyfriend jeans, I always like to pair it with a feminine top like this cropped peplum. It’s perfect for a fall day spend at the mall or in the park or out with friends. Wedges just made me normal height, so why not throw them on. These Cole Haan ones are always a go-to. They are so comfortable and not too tall.

The bag, the real star of this post, was a surprise gift from my parents my sophomore year of college. It has a tendency to a disappearing act every now and then, but it always comes back. I’m glad about that because I ADORE it. Kate Spade kills it with the wit. It’s my kind of humor… and my kind of arm candy.

I leave you with a taste of my everyday arm candy. If I don’t have these three on… something is wrong (or I’m in water).

kate_davis_godfrey_9_5_15_0024I hope you like the new format, and I’ll get better about posting…

Happy (Second Day of) Fall Y’all

Happy second day of fall! Even if it isn’t cold enough outside, I just want to put on a sweater scarf and boots… Being honest though, it usually don’t get chilly enough for that until October. That’s why I personally love getting dressed this time of year. The possibilities are endless with mixing and matching your favorite summer, winter and fall pieces. The fall season brings so much joy and color. The leaves in the mountains turn shades of orange and yellow that are just enchanting. I’ll make sure to get pictures this year. For all you Starbucks lovers, it’s pumpkin spice latte time! They even released a new fall flavor this week called toasted graham… I might just have to try it.

Mixing pieces has always been one of my favorite ways to style clothing. Now that you never know if it is going to be chilly or warm outside, it is usually best to be ready for whatever the weather person got wrong. I decided to try something new and style a t-shirt over a dress (one of my best friend’s dresses I  borrowed… for a while). I was a little concerned that it wouldn’t look right but the colors of this amazing Whiskey Jam shirt matched the skirt perfect, and don’t be surprised if you I wear this to Pilgrimage Festival this weekend.

kate_davis_godfrey_9_5_15_0117Knotting up the t-shirt keeps it from falling at a weird spot on the dress, and made the dress look a little more like a skirt.

kate_davis_godfrey_9_5_15_0124

Seriously this shirt… My dad surprised me with it and I don’t think he could have done a better job picking out something for me.

kate_davis_godfrey_9_5_15_0125

If you know anything about me, you know that I love the city of Nashville beyond words.

kate_davis_godfrey_9_5_15_0126

Even if this dress isn’t mine, I am still so obsessed with the colors, style, pattern and the fact that it’s Forever 21. My chancing at keeping it are pretty good until Hayes reads this… Sorry little!

kate_davis_godfrey_9_5_15_0134

When fall days get a little warm, all I need to do it take off the t-shirt and be on my way.

kate_davis_godfrey_9_5_15_0137

I traded the hat for the shirt, because the hat just added that reminder of fall that I couldn’t resist.

For fall, every girl needs a good pair of motorcycle bootsa funky patterned dress, and a felt hat.

…. and I made some pies yesterday! Happy fall!

For the drink of the day… Pumpkin beer!

I have never been a huge fan of pumpkin flavored things, but I’m open to suggestions! What are your favorite pumpkin beers that I should try? I never know which ones are going to be too pumpkin-y for me or which ones just don’t taste any different. I want to know what you think! Share you thoughts and I’ll try them out!

YAY! Pilgrimage Festival starts Saturday! I am seriously so excited. It will be one of the highlights of my year. Make sure to check out my Instagram (@responsiblyirresponsiblelife) for live updates this weekend! Saturday, I am so excited to be seeing Trampled By Turtles. My gal pal, Tori, and I were supposed to see them at Hangout this summer, but we got a little to lazy (read: drank an extra beer) to move out of our perfect spots in the sand. Lucky for us, we get a do over. Their Bluegrass style just has me waiting for someone to start shaggin’ with me. You can hear the talent oozing out of their fingertips while they are playing. It is easy to tell that they love what they are doing, and that is the best kind of music to enjoy. Here’s my favorite song by them; hope you love it as much as I do!
