One in a Melon

So.. it has been a while since I have had a chance to blog, but I promise I will start getting back on a regular schedule!

I had the opportunity to work at the Farmers’ Market again this summer and have had the pleasure of working with our AARP Fresh Savings program. I’ve enjoyed every minute of it and every person I have met.

Version 3

Working at the market means buying way too much produce every week- especially watermelon.

I purchased a very large watermelon the other day and had no idea what to do with it all… We froze some, grilled some with feta, balsamic vinegar and basil, created sangria, and made a salsa.

This salsa is too good not to share for the last few weeks of summer time sweetness.

Watermelon Salsa

1/4 of a large watermelon

1 jalapeño

1/2  red onion

a handful of cilantro

1 lime worth of juice

A pinch of coarse grain sea salt (or table salt)

*Hot sauce if you like it spicy!

Seed the jalapeño- set aside and add later if you want the extra heat the seeds provide. Dice each ingredient and mix together! Add the lime juice and salt at the end. Let sit for a few hours and enjoy it with your favorite tortilla chips!
